Scrumptious Sunday- Cowboy Caviar

For today's scrumptious Sunday I'm going to share one of my absolute favorite recipes. If we are ever going to a BBQ or potluck, this is what I bring. It is SO good!

Cowboy Caviar

5T red wine vinegar
up to 4T hot sauce (depends on how spicy you like things.)
1T olive oil
1-2 cloves garlic, minced
1/8 tsp black pepper
2 (large) avocados, chopped
1 (15oz) can black eyed peas
1 (11oz) can corn
2/3 cup green onion, chopped
1/2 cup cilantro, chopped
1/2 lb Roma tomatoes, chopped

Mix all ingredients together and salt to taste. Serve with tortilla chips and try not to eat the entire bowl!
